CIR food considers training as the fundamental tool for the personal and professional growth of an individual and of the company: for this reason, it has created an excellent internal training program called “Accademia di Ristorazione” or “ Restaurant Academy”.

The objective of CIR food’s Academy is to spread the value of the company’s resources, in order to build careers and personal growth for all professionals.

CIR food’s Accademia di Ristorazione intends to become the point of reference for people working in all various fields of the modern restaurant business, a place where they can learn about:

  • “Cooking Well”: the Academy teaches culture and techniques of the Italian cuisine,
  • “Dazzle The Customer”: the Academy teaches techniques for serving customers while focusing on their needs,
  • “Generate Value”: the Academy teaches competence and knowledge in the managerial, operational and business administration areas as well as in establishing business relations. All skills necessary to run a profitable business in a market which is rapidly becoming more complex and competitive,
  • “Innovate”: the Academy is a permanent research and development laboratory which studies new products, new production processes, new manufacturing techniques, new ways to transport and preserve products, new models, new services, new ways of utilizing spaces, facilities, equipments, furniture, ....

The training follows CIR food’s organizational models:

  • is divided by profession and theme,
  • takes advantage of the cultural and professional resources of the Company by using inside trainers, making it easier to spread knowledge and organizational skills and to exchange ideas and experiences,
  • it is supported by a teaching network, outside the Group, which has been developed over many decades in the business.

As for the teaching and organizational aspects, the Academy is subdivided in seven Areas which encompass all specializations and professions in the company:

  • Italian Cuisine Area
  • Business Administration Area
  • Sales Area
  • Innovations Area
  • Techinical Area
  • Quality Area
  • Management Area

Specifically, each Educational Area develops research activities and study courses focused on the three segments of the modern restaurant business, and to be more precise:

  • Restaurant Services for Communities (schools, hospitals, health care centers, older adults centers, corporations, military),
  • Commercial Restaurants (self service and full service restaurants, pizzerias, coffee shops, snack bars, fast food restaurants),
  • Special Events Catering (formal functions, parties, trade shows, sport and entertaining events).

Besides the products and services offered in the Catalogue, it is possible to create personalized courses that address specific development plans and their requirements.

To make the training more efficient, CIR food Academy keeps, as reference, the general models used for the education of adults and the different styles of personal learning, alternating various educational methods and promoting initiatives such as:

  • training: in class (courses, Seminars) or outdoor (direct experience)
  • hands on learning (training on the job)
  • individual development (coaching, development center, individual training)
  • learning organization (tutoring, study groups, job rotation)

In particular, a very important step to complete the educational process is the on-the-job training, which relies on structured tutoring programs, offering contributions from experts and promoting collaboration and the sharing of information.
